A Craft Beer Chef Tasting with Hubbell & Hudson’s Executive Chef Austin Simmons was one of the prizes given away during the Battle of the Texas Beers event held last July at Hubbell & Hudson Kitchen. The exclusive eight-course chef tasting was recently held at Hubbell & Hudson Bistro & expertly paired with several craft beers from ‘Beer Drinkers Choice Award’ winner Southern Star Brewing Company.
Chef Austin and his team designed a menu to not only complement the Micro Brews, but to also showcase the unique flavors that Craft Beer can bring to the table. The winner and three guests were wowed by the dinner:
“The meal was prepared with beauty and precision, with each dish having fascinating tastes and textures (like the hamachi bite with coconut pearls from molecular gastronomy also with a ponzu granita; or the deconstructed kimchi on another plate)! I also was astounded by the octopus – when it was tenderized and prepared the way your Chef did it, it was unlike any I had tried before (and happily so!!) The beer pairings added to our enjoyment — there were 2 Southern Star styles I had not had yet (Old Potentate and Half-Nelson) along with their more well-known selections. Delicious.”
Chef Austin Simmons’ new playground Cureight is slated to open in April, which will be the scene for such interactive culinary experiences.
